Lion's Mane Po-Boy and Other Recipes

Lion’s mane’s health benefits are plentiful. While you can add lion’s mane to your diet through supplements, there are plenty of ways to enjoy the mushroom in delicious dishes and drinks as well. 

Lion’s mane is easy to cook. There are all sorts of ways to prepare it. It can be sauteed, roasted, stewed, and more. With flavors and textures reminiscent of lobster and crab, it makes a delicious vegetarian option for meals. 

One great way to enjoy lion’s mane is in a po-boy sandwich. It makes for a delicious, quick and easy dish. 

 

Lion’s Mane Po-Boy

Ingredients

Lion’s mane (fresh or dried) - a couple handfuls

Two cloves of garlic minced

Four to six tablespoons of butter or vegan butter

Two green onions 

A teaspoon of salt or salt to taste

Pinch of pepper

Fresh baguette

Mayo or vegan mayo

Additional green onion for garnish

Cooking Instructions
  1. If using dry lion’s mane, prepare the lion’s mane by soaking in water for 30 minutes. In a bowl, cover mushrooms with water. You may have to put a dish on them to keep them submerged. After 30 minutes, drain and pat dry. 
  2. Slice lion’s mane into quarter inch slices. Chop bigger slices in half. 
  3. Dice green onions
  4. Melt butter in a medium frying pan over medium heat. Sauté garlic until slightly brown. Add mushrooms and sauté until brown and crispy, about 15 minutes. Near the end add green onions and sauté further. Add salt and pepper to taste
  5. While mushrooms are cooking, cut and split the baguette into sandwich size pieces. (We got ours at the wonderful St. Vrain Market around the corner.) Butter the insides and heat in a pan inside down, only a few minutes. 
  6. When mushrooms are cooked and crispy, plate the sandwich pieces and scoop the mushroom mixture onto the bread. Drizzle with mayo, top with diced green onions and serve.
